Most roasters quickly discover that their green coffee costs will be heavily influenced by logistics. Shipping one or two bags at a time is far more costly than shipping a pallet with 5-10 bags.
Experienced roasters also know to check which boutique roasters store beans at the major independent coffee warehouses and then combine purchases from multiple top-shelf importers into a single cost-effective shipment. Doing a shipment like this (usually referred to as a “consolidated” shipment) is how savvy roasters secure the highest-quality green coffee without the cost/quality tradeoff that comes from working with a single jack-of-all-trade importer.
